With this series, I debunk, review, and actually try to make those pretty Pinterest recipes that claim to be simple, easy, fast, and budget friendly. As someone who is clueless when it comes to food, really cheap, and really impatient, this should be a fun series for me. It will definitely push me out of my comfort zone, but hopefully it will be valuable to you!
When I get bored (and hangry) at work, I scan Pinterest for that new recipe - the one that I can whip up in a minute, that tastes gourmet and like fast food at the same time. I find myself pinning recipes that seem fast and easy, but in reality, take 2-3 times longer and usually make a mess. I'm here to try these recipes for you, so you know really which recipes are fast, simple in ingredients, and easy to prepare.
I'm back at it for another Real Foods review. We have been eating a lot of bad food the last week or so, and so we were both feeling a little heavy and gross. So I went with a light, summery dish that would be a perfect late-afternoon snack or even a full dinner.
This recipe called for simple ingredients, super simple assembly, and food in my tummy in 15 minutes. Plus, it was an excuse to buy those expensive Stacy's Simply Naked Pita Chips (my absolute fav).
I modified this recipe a bit based on what I could find at the grocery store, but, trust me. THIS IS AMAZING.

The original recipe labels it as a "salad" but it's a bit more like a salsa - a non-spicy mediterranean salsa. It's light, filling, and it has a fresh crunch.
Plus, chickpeas are full of protein! So it's a great vegetarian option that actually has a great source of protein!
I could eat this five days a week. It's that good. That f#cking good.
The only "prep" or "making" involved was cutting the veggies, whisking the sauce, and throwing it in a bowl. That's it. THAT's IT! It did take me a full 30 minutes to make, but that's because... I don't know how to dice. LAWLZ
