Real Foods: Chili Lime Chicken

With this series, I debunk, review, and actually try to make those pretty Pinterest recipes that claim to be simple, easy, fast, and budget friendly. As someone who is clueless when it comes to food, really cheap, and really impatient, this should be a fun series for me. It will definitely push me out of my comfort zone, but hopefully it will be valuable to you!

When I get bored (and hangry) at work, I scan Pinterest for that new recipe - the one that I can whip up in a minute, that tastes gourmet and like fast food at the same time. I find myself pinning recipes that seem fast and easy, but in reality, take 2-3 times longer and usually make a mess. I'm here to try these recipes for you, so you know really which recipes are fast, simple in ingredients, and easy to prepare.

This week, I picked something to throw on the grill for those perfect summer barbecues. Except.... I don't have a grill. (whoops...)

Luckily, this recipe includes directions on how to bake it in the oven. 

Guys and gals, this marinade is so f#cking good. I was hesitant honestly and chose this recipe because I thought my husband would like it. I'm not one for spicy food, but this perfect! 

The chili powder didn't really add heat, just dimension. (I feel so sophisticated, like I should start talking about it's "woody notes") And the lime and honey were the perfect compliment.

It did take longer to cook in the oven than advertised. But, at this point in the series, we are all used to that right? It feels like the estimated prep time and cook times are ALWAYS super optimistic. For this one, the marinade was quick to whip up; I just tossed the breasts in and threw it in the fridge for 24 hours; then dumped them in a Pyrex dish and popped them in the oven at 400. Although the recipe stated 20 minutes of cook time, mine was definitely more like 45 minutes.

(Maybe my oven is just broken? How do you know if you need a new oven? #adulting)

I definitely suggest throwing this on a grill so you can experience the full flavor of the chicken, but the oven route worked well too! I just wish it crisped the skin like the grill would have.


To be honest, this was the only thing I cooked for dinner. Nothing to go with the chicken, the chicken wasn't on anything, just straight chicken. I didn't even think of putting something with it until it was in the oven! So... maybe think ahead and make some rice, or potatoes, or a salad.

But, this was an extremely satisfying meal that had me licking my lips and my fingers to get every last bit.

Sadly, in my hungry excitement at the smell of this chicken, I forgot to take an after photo, so you
will just have to trust me!
